Cooking Club

I adore Cooking Club and am so grateful to be part of it! Every couple of months, these women raid the aisles of Costco and Sam's, do hours of prep work, and come together for four hours of non-stop cooking! 
Kristin & Libby (both on the left) are the masterminds of Cooking Club. They make the shopping lists and tally receipts on their whiz-bang Excel spreadsheets. Then we don our aprons and get to work over lots of wine and snacks!
 This month's recipes included Chicken Corn Chowder, Chicken Pot Pie, Meatballs, Shepherd's Pie, Rigatoni Casserole, Spinach Lasagna Rolls... I think I'm missing something. But they all taste amazing!

 Lindsey and I usually team up. On this night, we made the Shepherd's Pies and meatballs.
By the end of the night, we each went home with 14 meals to bless our families and friends. The grand total: around $6.50 each meal! That's under $2 per serving.
And I haven't had to cook all December long!
